What spices make good barbecue sauce?

I have been using a basic tomato based BBQ sauce recipe. Something is missing, maybe I'm just too used to manufactured bottled sauce. To this basic recipe, I have added tsp salt,1/2 tsp cumin, 2 tbsp molasses, tbsp oregano and thin it to desired consistency with pineapple juice. Maybe another teaspoon apple cider vinegar. Liquid smoke flavoring? Most bottles list high fructose corn syrup as the first ingredient This is the reason I want to make my own, not using bottled ketchup.

2 8oz can of tomato sauce

1 6oz can of tomato paste

2 tablespoons vinegar

2 tablespoons olive oil

2 tablespoons brown sugar

3 cloves garlic, crushed

4 tablespoons onion, minced

1 tablespoon Worcestershire sauce

1 teaspoon dry mustard

1 teaspoon cayenne(I replace with 2 tbsp ground chipotle chiles)

fresh ground pepper to taste. Cook onion and garlic till soft, add all ingredients and simmer low for 20 minutes, stir frequently.

    I use tomato paste and water...cooking does add a change--in flavor../

    Carlo Rossi burgundy wine--also adds a nice flavor..

    I like to prepare some garlic..bulbs..cooking inside the oven..400-[F]

    ..wrapped in tin foil..drizzled in Veg. Oil..about 45-minutes../

    Just slice off the Bulb-Top..and drizzle in some oil..

    Once the garlic is roasted--fully//

    Add it to some butter--for a saute'

    ...and then strain it---thru a sieve.../

    To use in a Injector Needle../

    If you use a drip pan...and a rotisserie

    ..I usually--re-apply the drippings...

    Vinegar..I use as a brine.../

    ...I save the brine for my jalopena' pepper's//slices...

    Oil..vegetable oil..I really don't use as a marinade..

    I would use metled butter--instead..

    Chilpolte's I use..but not w/black pepper..

    Brown Sugar..use a lot of brown sugar../

    Make a Spray..Bottle--of some type of BBq Sauce..

    Look to start---in a smoker grill..

    And finish in your kitchen.

    1st recipe :

     Recipe: Barbecue Sauce

     Recipes using Tones Minced Garlic 

    1/2 stick of butter

    2 small onions, minced

    1/2 tsp dry minced garlic

    1/2 bottle ketchup

    1/4 cup Worcestershire sauce

    1/4 cup vinegar

    1/2 cup water

    1 tsp mustard

    2 tbsps brown sugar

    salt and pepper to taste

    Soften onions in butter.

    Add rest of ingredients and simmer at least 30 minutes.

    2nd Recipe :

    Carolina Style Barbeque Sauce

    Prep Time: 10 minutes

    Cook Time: 30 minutes

    Total Time: 40 minutes

    Yield: Makes about 2 1/4 cups

    Ingredients:

    1 cup prepared yellow mustard

    1/2 cup sugar

    1/4 cup light brown sugar

    3/4 cup cider vinegar

    1/4 cup water

    2 tablespoons chili powder

    1 teaspoon black pepper

    1 teaspoon white pepper

    1/4 teaspoon cayenne

    1/2 teaspoon soy sauce

    2 tablespoons butter

    1 tablespoon liquid smoke (hickory flavoring)

    Preparation:

    Mix all except soy, butter and smoke. Simmer 30 minutes. Stir in remaining ingredients and simmer for 10 more minutes.

    3rd recipe :

    St. Louis Barbeque

    St. Louis Barbecue Sauce is thinner and has more of a tangy flavor than its Kansas City cousin. Being at the crossroads St. Louis style barbecue has many influences, so there are a number of ways of making this style sauce.

    Prep Time: 10 minutes

    Cook Time: 20 minutes

    Total Time: 30 minutes

    Yield: Makes about 3 1/2 cups

    Ingredients:

    2 cups ketchup

    1/2 cup water

    1/3 cup apple cider vinegar

    1/3 cup brown sugar

    2 tablespoons yellow mustard

    1 tablespoon onion powder

    1 tablespoon garlic powder

    1/2 teaspoon cayenne

    Preparation:

    Combine all ingredients in a saucepan over a low heat. Stirring occasionally and simmer for 20 minutes. Sauce should be thin, but not watery. Allow to cool. Store in an airtight container and refrigerate. Sauce is better if allow to sit for a day.

    I love some smoky tastes to mine so I always add ground cumin and smoked paprika to it.

    Two seeds ground are also a nice addition to sauces like celery and mustard seeds.

    It just takes some experimenting to find your favorite sauce. ENJOY!
