I bought a bunch of fresh herbs for the turkey but didn't use them. Any recipe ideas to use them up?

There is thyme, rosemary and sage. I know, a little parsley and I could have a song.

    You could clean them, put them in a food processor, with some olive oil, garlic and Parmesan cheese. Then toss with some hot pasta and sausage. Whaalaa! Lou's famous Pesto sausage pasta.

    For the sage, make Saltimbocca... pork or chicken rolled up w/ sage leaves inside in a pan gravy. Very Italian. Very good if you like sage.

    For the thyme, well, it's good in any chicken or pork dish! Roast a chicken, pork loin, pork tenderloin, and use the thyme. Also good in tomato soup, gumbo, and any soup made w/ chicken stock.

    Rosemary is nice in a roasted chicken or roasted potato chunks. It's also pretty and fragrant in a flower arrangement and lasts longer than the flowers do!

    Finally, while this dip doesn't call for any herbs you have, you can sub any fresh herbs you have. Give the flavors time to "marry" before serving... a few hours in the fridge will do.

    Fresh Herb Dip

    8 oz. cream cheese, room temperature

    1/2 cup sour cream

    1/2 cup mayonnaise

    4 scallions, white and green parts, minced

    2 Tbsp. fresh parsley leaves, minced

    1 Tbsp. fresh dill, minced

    1 tsp. kosher salt

    3/4 tsp. freshly ground black pepper

    Place the cream cheese, sour cream, mayonnaise, scallions, parsley, dill, salt, and pepper in the bowl of an electric mixer fitted with the paddle attachment and blend. Serve at room temperature.

    What I would do is make some herb infused olive oil. Place those herbs and a clove or two of garlic into a bottle of good quality olive oil and seal. Allow to infuse for anywhere from 2 weeks to 2 months. You'll have a fantastic oil for making salad dressings, marinades, or for dipping.

    This also makes a great gift idea for a person who likes to cook. Get a nice bottle and cork for the oil, and when it's infused - tie some raffia around the rim. It looks beautiful, smells wonderful and tastes fantastic.

    you can chop them up and freeze them in an ice tray with a little water then add them to dishes as the recipe calls for it, otherwise, chop them upo and put them on steak while your cooking it (rosemary is really nice on steak) or in savoury muffins. Lamb and rosemary go well together.

    delicious rosemary potato recipe:::

    put some olive oil in an oven pan and add chopped rosemary and crushed garlic....put that in the oven so that the oil absorbs the flavours...then add cut potatoes (blanche the potatoes first so they cook faster) and add chopped red onion mix it all with the olive oil and rosemary mixture....and then coat it all in balsamic vinegar...put it all back in the oven until the vinegar caramelizes and the potatoes cook!!!

    They are some of the most delcious potatoes I have ever had!!!!
