How do YOU make french fries? I saw a cooking show a few weeks ago where these people had a few minutes to make french fries?
AND they had to make them all the same size. Do you do that? Also do you call them french fries, shoestring, or something else?
Do you bake them first or fry them raw?

I have a commercial french fry cutter. I wash potatoes and put them thru the cutter. I discard small pieces and keep the rest. I put them in water and in the fridge for 2 hours at least. I remove from water and dry with paper towels. I set oil to 325F. When I get oil to 325F, I put in for about 10 minutes, then remove. I let sit for 10 minutes or more. Then I set oil to 375F and put in for 2-4 minutes, till brown. When I remove, I salt immediately. Come out really good.

I usually use knife and my french fries are approximately all same size. I cut potatoes like thick chips and make straws out of raw chip similar to cheese sticks. I sometimes deep fry and sometimes bake them. When they look golden, they are ready. It is fast and easy. For detailed recipe you could type "french fries recipe" on google and there are a lot of recipes.

I don't make French fries. I make chips, because I'm not American.
Peel the potatoes and cut them to the shape and size you want. Then you deep fry them.

Use Russets. Lay the potato sideways (skin on), make even slices. Stack the slices, make even sized sticks. I par-boil 3 minutes, drain/blot dry, toss with oil, oven bake crispy.
