what is this olive oil, vinegar and spices emulsion process called?
I was experimenting trying to make a marinade. I used 1 cup olive oil, 1 tbs minced garlic, 1 tbs chili powder, 1 tsp cinnamon, 2 tbs apple vinegar, salt. I stirred it all up and it turned into a thick sauce about the consistency of mayonnaise. It tastes pretty good, I used it for a stir fry sauce, but is there a term for what I made, not the ingredients, but the process of emulsifying the vinegar, oil, and spices. I need it to be more liquid for a marinade, I'm going to try to add some water.
I forgot, I also added a tbs of molasses, and a tbs of brown sugar. It's still holding together overnight. What is acting as the emulsifier? or is this more of a paste, the spices soaking up the oil and vinegar. There is no egg in it.

You have made an "emulsion" that can be used as a salad dressing, marinade or cooking sauce. You do not really need to add more water to use it as a marinade. It will stick your protein the way it is. Sounds like you've come with a very versatile emulsion.

EVOO or 2nd olive oil?
must be the sugar and the mole as ses. Might try that? Maybe if you refrigerated it EVOO will hardeen in the fridge! Mustard will usually hold it together. it's called a temporary emulsion!
