home made red cabbage like from kebab shop?
I love the red cabbage from the kebab shops, nearly addicted to it. I tried those pickled red cabbage, but that is nothing like the one from the kebab shops.
Does any one know how to make that lovely red cabbage? Any receipes?

Try this. It works with white cabbage too. Shred your cabbage, preferably with a mandoline, to the thickness that you like. Now with clean hands, ptck up the cabbage from the bowl and grasp tightly whilst twisting each handful as if wringing out a wet towel. This breaks some of the fibres, and it tenderises the shredded cabbage. Dress with a fair amount of salt and lemon juice. The Turkish guys add some oil too, but try dressing small piles with different mixtures of the three ingredients until you achieve the taste that suits you. Me? I find that salt and lemon only tossed around the cabbage is excellent. That's how I serve it to friends and family, and it doesn't last long!.
