What are you having for dinner tonight?

What should I cook for my wife and myself tonight? When we get home we will be hungry and it shouldn't take long to prepare. Suggestions please!

    Pasta is easy of course - how about garlic-chilli spaghetti with turkey or chicken - just dice the meat, sear on very high heat with olive oil, minced garlic, minced chilli and dried or fresh chopped parsley (try pressing down on the meat so it sears faster) until all white, add a splash of cooking water from the pasta, cook stirring 1 minute longer then add drained cooked spaghetti. Serve with parmesan cheese and tossed green salad.

    Or if you have frozen prawns, cook under the grill coated in a generous mix of olive oil, lemon juice (or white wine), garlic, chilli and parsley. Scrape the whole lot (thoroughly, you want all the sauce!) into the pasta and toss to coat, serve as before.

    Or good ol' bangers and mash - panfry your pork sausages with thinly sliced onion while boiling diced potato. Allow the drained potato to dry out for a minute, add melted butter mixed with warmed milk, mash until creamy, add salt and pepper (and maybe grated cheese or parmesan mmm!). Add instant gravy (with the hot water mixed in already!) to the sausage pan, simmer for a couple of minutes to reduce, serve the sausages on a mound of mash with lashings of onion gravy.

    Or dice scrubbed potato, carrot, parsnip and sweet potato (ok whatever root veg you have!) to 1cm pieces, toss quickly in olive oil, salt and pepper and roast at the top of a very hot oven for 20 minutes, tossing once. Meanwhile, dredge a couple of firm white fish fillets in seasoned flour and panfry in olive oil. Serve with the roast root veggies (call it a melange if you wish!) and a green salad. Or with microwaved or steamed frozen green beans, tossed with a little butter, salt, pepper and fresh tomato wedges.

    Or marinate boneless pork chops in a mix of soy sauce, brown sugar, apple or pineapple or orange juice, garlic, ginger and chilli. Shake to coat thoroughly then leave on the bench for 20 minutes. Grill in the oven for 7 minutes a side, basting with reserved marinade when you turn them. Microwave the last of the marinade uncovered to reduce - stir after 1 minute and microwave again. Serve drizzled over the chops, with mashed parmesan (or garlic) potatoes and honey glazed (microwave julienned carrots until tender, drain and toss with a little honey or with butter and brown sugar) and steamed beans. Or with couscous made up with 3 cups hot chicken stock to 2 cups couscous. Leave to absorb 15 minutes, then fluff up with a fork and toss chopped fresh coriander and freshly ground salt and pepper through it. I like to add diced peppers at this stage - if you have more than one colour, mix it up.

    Cottage Pie. Café Style

    500 grams Beef mince.

    1 Medium onion, chopped.

    1 Carrot, halved and sliced.

    2 Stalks Celery, sliced.

    2T Tomato Paste.

    400 gram can Chopped Tomato and juice.

    1 Chorizo, sliced.

    1/4C Red wine.

    1T Thyme, chopped (1t dried thyme)

    500 grams Mashed Potatoes.

    Brown the mince and remove from pan.

    Cook the onion, carrot and celery gently until tender and stir in tomato paste and cook for 1 minute. Add canned tomatoes, return mince, cover and simmer for 15 minutes.

    Add chorizo, wine and thyme, stir and serve into ramekins.

    Top with mashed potatoes and bake at 200C in a preheated oven for 15-20 minutes or until golden.

    Serve with green vegetables.

    This is what I think I am having:

    Sirlion, potatoes, veggies, and bread rolls or maybe just go to Chinese take-out

    This is what i am recomending:

    Go to like a Chinese or whatever restauraunt

    or just make some quick fish(fish is easy to cook), quick steamed veggies, and some fruit, noodles, or rice or something in the grains food category!

    Sausage, beans and spuds. Can't be bothered trying to think of anything else. I have all the above at home so no need to go to the shops. Oh just remembered I've got some rhubarb so I'll stew it for desert. Yummy.

    I'm making chicken fahitas.

    You could have a burgers, hotdogs, spaghetti and meatballs, hamburger helper, breaded chicken with a veggie on the side, a fillet of fish, bbq a steak

    I'm having whatever my boyfriend decides to cook for me. No doubt it will have chips involved and have been taken out the freezer to make his life easier so he can watch the footie!!

    What about making some sort of pasta dish? They are simple and quick to make

    enfrijoladas (mexican)

    buy tortillas and a can of beans, cheese , milk, onion, ham, and cream.

    put the beans in the blender with just enough milk to make a creamy sauce and liquify. then warm it in the cooker.

    deep fry the tortillas, stuff them with ham and fold them (like pasties).

    cover them with the bean sauce and some cheese that melts, and a bit of cream and chopped raw onion. (i spoon per four tortillas)

    there you have it Mexican Enfriljoladas!
