    Chocolate Cake

    Bake: 35 minutes

    Cool: 1 hour

    Stand: 1 hour

    Ingredients

    3/4 cup butter

    3 eggs

    2 cups all-purpose flour

    3/4 cup unsweetened cocoa powder

    1 teaspoon baking soda

    3/4 teaspoon baking powder

    1/2 teaspoon salt

    2 cups sugar

    2 teaspoons vanilla

    1-1/2 cups milk

    Directions

    1. Allow butter and eggs to stand at room temperature for 30 minutes. Meanwhile, lightly grease bottoms of two 8x8x2-inch square or 9x1-1/2-inch round cake pans. In a medium bowl stir together flour, cocoa powder, baking soda, baking powder; and salt; set aside.

    2. Preheat oven to 350 degrees F. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Cake mix route is best to start. Here are some hints that I found out the hard way over many years of practice. While these are not hard, they are good practice and make sure your efforts are not thwarted.

Use fresh eggs and large ones. Set them out early to come to room temp first. Break them into a bowl separately, then add to mix one at a time, in case one egg is bad, you can throw it away. Beat as per mix instructions. It is really important not to over beat.

If you are going to make a layer cake, you want it to be level. I found that if I spray the sides only with veg spray, and put some flour in pan, shaking it around sides, empty excess, and put parchment paper in the bottom (find with the foil and plastic wrap or baking section, put the pan on paper and trace, cut out.) The flour makes the mix stick to sides of pan rather than dome up...more likely to stay flat. The parchment makes the cake turn out perfectly, gently peeled off and discarded. You can do this with a 9X13 pan too.

You can add any flavorings, just put in measuring cup before you add water so you don't increase the total amount of liquid to the mix. Ex: 1/4 kahlua OR very strong coffee, 1 T Mexican vanilla and 1/4 c hersheys syrup to a choco cake. Put the above in the measuring cup and then add water to the amount of the water called for. If the mix calls for 1 1/2 c water, put the syrup etc, in cup, then add water up to the 1 1/2 c line. When I add flavors to a mix, people think it is a home made cake!

Welcome to cake baking...you will fall in love with all the kinds you can make.

The best thing to do is get a boxed cake mix and follow the directions. That is what they do in the bakeries. You just add the ingredients preheat the oven grease and flour the pan and make the batter the way the box tell you and bake it. It's easy then you take it out of the oven and immediately out of the pan or else it will fall apart and then let it cool and then you can frost it.

Buy some cake mix and follow the directions on the back of the box. I wouldn't suggest making a home made cake if it's your fist time.
