You can call what you create, whatever you want to call it.

It sounds like it would taste good, which is all that matters to me. 

Maybe add a pinch of baking soda.  

You probably can but you're end product will be most likely be more of a crepe than a tortilla (assuming you mean a Mexican tortilla, not a Spanish tortilla - completely different).

There is no egg in a tortilla. It's flour (corn or wheat), water, salt and a fat. Adding eggs will make it a pancake.
