What's your favorite cookbook?
I really like Joy of Cooking, and have gotten lots of use out of it (it's what I use almost exclusively when making pie), but my absolute favorite is the American International Encyclopedic Cookbook. It's out of print, ancient (from the 1970s), and completely indispensable. I'm constantly referring to it when trying out new techniques. One of its best features is the way it lists a master recipe, followed by all kinds of variations--perfect for learning.

I have about 20+ cookbooks including Joy of Cooking but my favorite is "Best Ever Three & Four Ingredient Cookbook" by Jenny White. You can turn out some beautiful. impressive looking and delicious dishes-- appetizers, entrees, desserts, etc. using only 3-4 ingredients (excluding things like salt, pepper, etc.)

I love to cook complex dishes but I find this one to be the most creative.

I am a chef.
I have a few favorites - so I will not try to identify my absolute favorite, but I will list the top five:
Best Recipe (by the editors of Cooks Illustrated) (each recipe tried in a hundred different ways to find the absolute best. VERY informative. Maybe too informative...)
The Martha Stewart Living Cookbook. Compiled from the first 10 years of her magazine. Excellent collection
Joy of Cooking. The bible of virtually every How-To
King Arthur Book of Baking. Every baked good you ever heard of, and many you didn't.
That's it. Good luck finding your own favorites

I love Julia Child's Mastering the Art of French Cooking 2 volumes to learn the expert basics, Dianna Kennedy for learning real Mexican Cuisine, Barbara Tropp's 2 books for innovative Chinese Cooking,Southern Living Magazine publishes some wonderful, reliable books and yes, my tattered old copy of Joy of Cooking is a thrift store find from the 1950s which I prefer to newer versions.

I enjoy looking through cookbooks, especially regional ones when we travel. But I agree that the Joy of Cooking is my go-to.....where else can you find out how to cook bear meat?! I also like all of the Moosewood cookbooks.

I collect cookbooks, recipe booklets, etc. You don't want to know how many I have. My all-time favorite is Charmaine Solomon's Complete Asian Cookbook. (I have the original edition and don't know how the subsequent editions may have changed.)
