Healthy Lunches To Go, No Wheat?

Hey :)

So i am looking to find some new ideas for lunches to go. They need to be low cal (maybe 400 calories and under), healthy, and contain no or little gluten (no allergies, just being careful) and preferably no red meat.

Thank you :) I will have a fridge and a microwave available to heat things up. Just looking for some new ideas.

    Vanilla yogurt, barley muffins, raw fruits and veggies, natural applesauce, and chunks of cheese are all healthy things you can add to your lunch.

    Instead of wheat bread you can use spinach wraps and fill them with any combination of things, including grilled chicken strips, tomato, lettuce, beansprouts, avocado, bell peppers, tuna salad, shredded cod, cooked eggplant, etc.

    You can also bring some premade salads with dressing on the side. Black bean soup is a protein rich, healthy dish you can make ahead and have leftover. Grilled shrimp is good cold, as is shredded chicken breast from a store-bought rotisserie chicken.

    I've gotten really into variation in lunches. Bento Box style :) Lots of different little things like a piece of squash, some steamed carrots and tamari, home-made brown rice vegie sushi, baked tofu.

    Sometimes when I was an all in one dish, i made a salad with quinoa and chick peas. Then I add whatever fresh veggies I have kickin around, cucumber, shredded carrot, red onion, and sometimes mushroom. i like to make a dressing using either plain yogurt or cottage cheese(if i'm thinking creamy) or flaxseed oil, with a little mustard, redwine vinegar (or umeboshi plum vinegar if you can find it, full of goodness) and salt and pepper. Sometimes i just mix sweet chili sauce with flaxseed oil . There are so many ways you can shake up a quinoa salad. Just remember when you're boiling up the quinoa that a little goes a LONG way :)

    If your not into quinoa or can't find it, try substituting it with pot barley! You can make delicious cold salads with pot barley! olives go great with it! and so do sunflower seeds! the possibilities are endless!

    A stick of string cheese or 2 (purchase 'em interior the huge applications rather of single packs, then placed them in baggies or a small field), some cherry or grape tomatoes, a small bunch of grapes, and a few nuts or seeds.     Something that would be really healthy and really quick would be to get some leaf or romaine lettuce (anything with big green leaves), and make a "sandwich" out of it. You could pile on a bunch of your favorite veggies, olives, a little bit of light mayo or salad dressing, and some smoked turkey. Yum!

    shredded chicken or turkey, tomatoes, cucumbers, or any other vegetable you like, some light Italian dressing or mustard, wrapped up in lettuce leaves instead of flatbreads.

    You could make some tabbouleh using quinoa insteaad of couscous (which is semolina wheat), plus a hard-boiled egg (white only) and some kind of fruit.

    Wrap your sandwich ingredients in a couple of large lettuce leafs instead of bread. That will help limit both gluten and calories.

    Lots of veggies with light ranch dip. Orange juice to drink. Fruit cup for desert.
