I'm assuming what you are referring to as hibachi-style chicken soup is the kind where you start with a pot on your hibachi filled with broth. Then you have plates on the side of veggies and meats and you skewer the veggies and meats or just drop them in, and cook them in the broth, pulling them out when they are done. And everyone at the table puts their veggies and meats in there too. Once you've all eaten what you want of the veggies and meats, you add green onions and peas to the broth, ladle it out into bowls for everyone and you eat the soup. Is that what you are after? The meat is cut into thin slices as are the veggies. At the end, you could even add a stirred egg to the broth to have egg drop soup.
