Help....can someone please give me a recipe 4 making lemon cordial? Thx?

I've got 2 recipes and u pick one of them:

1) Hayley's Homemade Lemon Cordial

* 2 cups white sugar

* 2 cups water

* 1 teaspoon lemon extract

* 1 1/2 teaspoons cream of tartar

In a saucepan combine sugar, water and cream of tartar. Heat until sugar is dissolved but don't boil. Remove from heat. Add lemon essence and let mixture cool.

2) Lemon Cordial Recipe

2 Gal. lemon juice

5 pounds sugar

1 teaspoon metabisulphite (optional preservative)

Mix altogether in plastic containers making sure to dissolve all sugar and refrigerate. The recipe can use orange instead of lemon or a mixture of both.

Not strictly speaking a "cordial", but this recipe comes out so flavourful you could easily water it down....

From my VERY old Good Housekeeping book:

'Still' Lemonade

3 lemons

175g sugar (I used less)

900ml boiling water

Wash the lemons and peel of the zest with a spud peeler. Put the zest and the sugar in a large (heatproof) jug and pour on the boiling water. Cover and leave to cool, stirring occasionally. Add the juice of the lemons and strain the lemonade. Serve Chilled. Makes about 1.1 Ltrs.

I tried this recipe when a friend's lemon tree when berserk and she ended up with more fabulous, organic lemons than she knew what to do with... it's delicious. I only used 150g sugar - reminded me of my mums lemon pie! :->< Yum!

Old fashioned lemon cordial

Chef: Ann Creber

Degree of difficulty: Low

You need:

juice 6 large lemons

grated rind 3 lemons

4 cups sugar

1 tablespoon citric acid

2 teaspoons Epsom salts

900ml boiling water

Method:

Juice and grate zest of lemons.

Strain juice and add all other ingredients.

Stir until dissolved then allow to become cold before bottling.

(Makes 4 bottles.)

Serving Suggestion: 1 - 2 tablespoons per glass topped with chilled water or soda.
