Candy making...Toffee-Flavoured Fudge?
Now that I've learnt(Thanks to Clever) how to make ungooey fudge (chocolate and white maple)I'd like to know how to give it a toffee flavour without burning it....

I was a Technical Manager in a sweet factory for 40 years so maybe this is the answer!
Take equal parts of condensed milk, glucose syrup and butter. Add two parts of sugar and one-half part of water. A salt spoon of salt helps the flavour. Add any ods and ends you fancy for flavour.
Boil gently with continuous stirring making sure you keep the bottom of the pan well scraped. Boiling should take about 15/20 minutes to give a well caramelised flavour.
Drop a small amount of the boil into cold water - I used to do this by dipping two wetted fingers into the water and then into the boil BUT I do not recommend this to unskilled!
When the mix sets firm but not so hard it will crack stop the boil. If you have a thermometer this is about 246 degrees Fahrenheit.
Dip the base of the pan into cold water for a second or two then stir until it is evenly cooled.
Add about a quarter part of fondant and stir until even before pitching into an oiled tray.
This is by no means a commercial recipe and method as we used to make in 300lbs batches!
