Can I get arrested for stabbing someone with a knife if they're harassing me?
Okay so I'm 17 years old and I have no car. So I usually get around by walking. Guys always cat call at me, and some pull over and will follow me, asking me for a ride until I bluntly, and rudely say no. This happens OFTEN. But what if one puts his hands on me. Can I stab him? Or do I have to have a permit to carry around a knife? Also. what if I stab him with a random object like an umbrella or pen?
What if he tries to put me in his car? Then LEGALLY am I allowed to stab him?

If he puts his hands on you against your will, you can defend yourself, even with a knife.
Most places, there are restrictions on the size of knife you can carry. Still, if you are defending yourself, the police are not likely to make an issue of that.
If somebody is harassing you verbally, though, you do not have any right to stab him unless you feel he is about to attack you.

Yes, you can be arrested for any type of violence. Even if they don't charge you they can just put you in a cell for a few hours to make sure you've calmed down.

Yes. You would probably be found guilty of a crime.
The only time you can use deadly force is if you are "in fear of your own life or great bodily harm" according to the law. Someone harassing you would not count.
