Cellulose and nutrition panel?

Often I visit nutritiondata.com and have begun to wonder if the information is misleading when concerning raw foods. When considering the nutrition panel for raw foods, is the information including the nutrition that is not bioavailable due to the cellulose or is the also included? According to the site 1 cup of kale has 2.2 grams of protein. Is that really so?

    cellulose actually does become bioavailable to us. We don't digest it ourselves, but bacteria in our intestines do and after they do that it's absorbed. Per weight kale doesn't have too much protein, but per calorie it has more than most meat. Anyway, you really don't need as much protein as a lot of people think you do.

    The nutrition panel information only includes what is being tested at the lab- the carbs, the protein and the fat and does not account for the bioavailability. In fact, the bioavailability of food is dependent on person to person.

    If you google Canada nutrient database, you will find the more detailed nutrients.
