Is it possible to get my middle name changed (in North Carolina) without hiring a lawyer?
I was told that you had to hire an attorney to handle the paper work and it would cost somewhere around $1000. Surely there has to be another way because $1000 for a name change is just absurd.

You don't need a lawyer at all. It's quite a simple process.
Assuming you are over the age of 18, you need to go to the clerks office in your county court house and ask for the forms. Pay the filing fee, post the notice in the court and wait the statutory time. I think it is 20 days, but the form will say for sure.
At the end of the waiting period, the judge will sign the order and you have a new middle name
