Why are 24 hour restaurants profitable?

I live in Germany and just read that there are many restaurants in the US that are open 24/7. Over here in Europe, you'd be hard pressed to find one; even in bigger cities like London, Europe's biggest city with roughly 10 million inhabitants there will be maybe two or three. Are there really that many people in the US that eat burgers at half past three in the morning to make these restaurants profitable? How many people could one expect to find sitting in such a restaurant on an average night?

Edit: I don't mean to say Americans are obese. That wasn't the question here. I'm just wondering if there are so many people that want to eat out in the middle of a Tuesday night that keeping a restaurant open then pays off. Obviously there's money to be made at the weekend, when people want to eat something at the end of a pub crawl or however you call it. But wouldn't it be more profitable to open for, say, 72 hours at the weekend and close for the night or a few hours during the week?

Update 3:

BTW the EDITING OPTIONS ARE GREAT HERE. Makes me look like a moron. Instead of replacing what I wrote earlier they just add stuff up.

some of the over night business comes from people that work off hours such as truckers, health care workers, police, factory workers, etc

Many all night diners have good cheap breakfasts, so people pop in before work (like 5 am). Don't forget students.

You can find such restaurants in many larger cities but by no means are there a huge number of them.

That said, they are profitable because there is a much higher percentage of people that eat out on a regular basis, most of the locations are in heavily traveled areas like near and visible to freeways and they have a menu of items that are mostly easy to prepare. Many of these are chains (the largest is Denney's), which is not as prevalent in Europe, and those are often not only 24 hours but 365 days a year.

why do you think so many of us are obese. On the weekend there are more people in there at 3am than at 3pm.
