do bananas change colour?
Hi, When I am going to work i put a yellow banana in my bag and when i wake up its speckled!!!

Bananas are the most popular fresh fruit in the United States. They have a peel that comes off easily, they ripen after they've been picked, there is a generous supply all year, and they are inexpensive. Bananas have both a high amount of carbohydrates as well as potassium, which also makes them the fruit of choice for many athletes.
Selection
Avoid bananas with brown spots that seem very soft. Select those bananas with a nice color, specific for the variety. Choose fruit that is firm and free of bruises. Best eating quality has been reached when the solid yellow skin color is speckled with brown. Bananas with green tips or with practically no yellow color have not developed their full flavor. Bananas are overripe when they have a strong odor.
Storage
To further ripen bananas leave at room temperature for a couple of days. Once ripe you can store in the refrigerator for 3 to 5 days. The peel may turn brown in the refrigerator, but the fruit will not change.
Varieties
The very popular yellow banana of Cavendish is the banana we see in grocery stores. However, Plantains, Finger Bananas and Red Bananas are also popular varieties. Most all have a soft texture when ripe.

So that all the fruit ripen at once, as a banana starts to ripen it releases the gas ethylene, and bananas exposed to ethylene ripen faster. When enclosed in a small space with no air flow like a bag (not natural for bananas unless they have fallen to ground and are in a place where they should start to try and grow) the ripening is rapidly accelerated.
So if you're worried, take them out of your bag as soon as possible and/or find some way to ventilate it. However, in a few hours is unlikely to actually affect the quality of the banana.
Also note the conversion from starch to sugar progresses through the whole green -> yellow -> brown cycle, so bananas starting to go brown should actually taste better than yellow ones. However, they will be softer because the starch is no longer holding it together.

A brown paper bag (or other container that retains humidity and heat) will hasten the ripening of the banana .... so, yes, that's why it's getting speckled. Take it out of the bag when you get to work and don't let it get too warm (and don't put it into a refrigerator) - just room temp

As they ripen, they change from green to yellow and then get speckled. They are very sensitive to changes in temperature. If you place them in the fridge they will go brown quickly. If you leave them in a sunny place, their ripening process will be fast. Best advice is to buy what you intend to eat in 2 days max.

They're green, and then they turn yellow when they get ripe, and then when they start to go bad they start turning brown.

green and yellow is the SAME~~~ your (our) programed brain thinks its different.. but its NOT! I saw one.. take place in 3 minutes..
