I want to add Cat5 (Ethernet) connections to most of the rooms in my house. How can I run the cables through the walls without opening them?

get remodel or cut in boxes that is the only hole you need to cut in the wall. you cut the hole for the box then you drill a tiny hole in front of the wall with a long 1/8 drill bit , I sometimes use a piece of coat hanger. i find it in the basement to identify where to drill my hole for the wire, use a fish tape or a chain and telescoping magnet drop the chain down the wall and catch it in the basement with the magnet.
I also use a long flex bit its 4' long with a 1/2 inch drill on the end.

I don't think you can. You can try running the largest part of the cable run either in the basement/crawlspace or in the attic and then drill through either the top or bottoms of the walls and then poke the cables out wherever on that wall you need to.
If you want to run it across any interior or exterior wall you will have to deal with any vertical framing members like 2x4s which are spaced around 16inches on center though I have seen different spacing on interior walls and you cant do that without opening the walls.
If you are totally unwilling to make holes here and there you should probably consider wireless internet etc. Just make sure you read up on the security setup so that you can help prevent unauthorized access to your network.
