What does the word "against" mean in this case?
The sunset turned the sky to fire.
1. What does the word "turned" mean? I can't understand this sentence too.

Against- means in contrast to(the deep blue sky)
Turned- in this sentence it means 'changed'

It means change or transformed. Instead of the sky being blue, the impact of the sunset was to turn it to a fire color, most likely reds, yellows, and shades of both.

in this context icy white against the deep blue sky simply means it shows up clearly because of the contrast (difference0 between the white and blue - hope that helps. In the second sentnce, the sunset made the sky red so changed the look and made it appear to be on fire. Is that clearer. That's the trouble with English, there are so many different ways to say things. I should know - I'm an author!
