When congress FINALLY got to see many of Hillary's emails that were on her bathroom server, why were they so heavily redacted?

They were redacted because the information was so heavily classified that even the Congress oversight committees can't be given the files. Hillary had these files on her unsecured, private server which is illegal. Both CNN and Fox are intimidating that these files contain info and names of human intelligence resources. These are the most closely guarded files because people's lives are at stake. It's illegal to have these on a server such as hers and totally illegal to have them in e-mail form. She knew this. Comey has stated that her server "most likely was intruded upon by foreign entities". These files are probably the topsecret, special access files that we keep hearing about. Hillary should have been indicted for this. Regardless, the redacted files are so sensitive that even secure oversight committees are not given access to them.

The information was so classified that it couldn't be released but since Hillary has repeatedly assured us, it wasn't really so someone is trying to make her look bad.

Nobody cares. Just can't squeeze another fake republican SCANDAL out of this one.
