Is it unwise to reference well-received, unauthorized fan translations of books in freelance translator portfolio?
I think making these is illegal but no one seems to care much. Would this be an asset to my portfolio or might it make me look shady?

It's a bad idea to confess you ignored copyright laws.
Besides looking "shady" someone might send a copy of your portfolio to the publisher/author of those books and then you could face a long and expensive lawsuit.
The statutory penalty for the copyright violation of works registered with the US Copyright Office could go from $750 to more than $30,000 for EACH copyright violation. In can be increased to $150,000 if there are aggravated circumstances. Additional penalties can be imposed depending on other facts.
