Yes, the two mice are fine in a pinch. Healthy snakes can go quite some time without eating with no ill effects.
I'm assuming your Ball Python is a normal. You would need an incubator for the eggs to insure a good hatch rate. Breeding a normal to a recessive morph will result in normals that are het for the trait in question. Both the pied and the albino are recessive morphs. With a co-dominate morph, roughly half the hatchlings would be that morph. You need quality breeding stock. That is not something you got from a pet store. Breeding snakes should be about advancing genetics, not producing babies for the sake of doing it. You need to be able to care for the entire clutch, if need be, until you can sell or give them away. This is often difficult, especially for normals, which can go for as low as $15 or $20 at reptile shows. Unless you are into very high quality, high end morphs, you will lose money.
Also, if you have wait for someone to get paid to properly feed your snake, breeding them should be the last thing on your mind. Not being rude or anything, just stating facts. A proper incubator will be several hundred dollars. A baby rack sufficient to house a couple dozen babies will set you back a few hundred. Fuzzies to feed these babies every 5-7 days is also expensive.
