Because gerbils are burrowing animals. They dig, dig and dig some more.
They are likely unintentionally burying the bowl as they do so.
Do you have 6"+ of bedding in for them? I've always scatter fed my gerbils

because gerbils want to dig. they like to dig and dig and dig.you can put sunflower seeds in the bedding if you want to so that they can dig for it
