As someone has already said, the iPhone 5 is probably easier to use. But it's graphical interface is now coming up on almost 6 years old. Mobile has moved so far since the iPhone first came out. What people do on their smartphones has evolved, but Apples UI has not, IMO.
These sorts of questions can be very subjective. But just based on the hardware specs and features, the Nokia wins by a wide margin.
Three pieces of tech which have been demonstrated on the new Nokia, two of which the iPhone just does not have. 1) The PureView screen on the Nokia allows the user to use finger, stylus, key, fingernail, a glove covered hand, etc. etc. Just about anything can be used to interact with the screen. 2) NFC...many more Android phones have this now and it appears to be a technology that is maturing well, so the Nokia will be 'ready' when more accessories and services are available to utilize NFC. Apple does not have these features.
While the iPhone does not have those two pieces of tech, it does have an upgraded camera with image stabilization. However, the iPhone is done in software, not at the lens, where it is preferred. This is referred to as Optical Image Stabilization or OIS. Apple's is digital, in software, not at the lens like the Nokia.
If you look at comparison of the OIS on the Nokia to other phones like the iPhone 5, the Samsung S3, and HTC One X, they do not stack up to the Nokia 920's optical image stabilization and even in image quality.
Based on those three things, the Nokia is the clear winner. Where the iPhone would be better is availability of Apps compared to Windows Mobile 8 and the iPhone's ubiquity. But just because something is common, doesn't necessarily mean it's better.
My last iPhone was a 3GS, and have since had four Android phones and three Android tablets. I still think Nokia is 'doing something different' with the smartphone in terms of hardware and their work with Microsoft on the software side.
I have not used Windows Mobile, but from what I've seen, read, and heard, it's a blend, somewhat of the simplicity of the iPhone and also the features of Android with its widgets.
