In a easy way to under stand it
you know back in the day all our old games had rough pixel edges and blury edges
well AA smoothes these edges out making the hands the cheeks neck everything look more real and making the character look much better the higher the AA the better the quality of the character looks
heres a look at diffrent pictures gta 3 was a bit blury

anti aliasing AA for short is used in games,3d modeling and a lot of graphics on a computer.
all it does is use your computers graphics cards proccessing power to blurr the edges of objects like say in a game when you have a sword out the edges of it can be very jagged a squarish you know? anti aliasing blurs this so it looks better.
theres actualy a few types of anti aliasing around, some of it can make things too blurry and be a little less accurate which makes these use less proccessing power others are more precise and this is more of a ***** to the graphics card.
btw i like how the other guy copy and pastes the first answer off wikipedia *cough*plagirism*cough*
and it really doesnt explain mutch XD
in games you usualy pick between x2 x4 or x8 some graphics cards have an inbuilt option for x16 and even x32 i think.
it becomes less useful as your screen resolution goes up at 1920x1080 you probably wouldnt mutch notice above 4x and even 0 is fine.

Anti-aliasing refers to a number of techniques to combat the problems of aliasing in a sampled signal such as a digital image or digital audio recording
