You might have moved those inoperative apps onto your SD card at some point after installing them so some, maybe most, but not all of their data will be on the 8GB card. Dunno if it would make your apps work, but you could either pop your SD card into a pc card reader, or connect your phone with the old card in it to a pc via USB (as a mass storage device i.e. like a removable hard drive) and copy everything onto the pc hard drive, then write the whole lot over onto your 16GB card. That might work but make sure you format the new sd card in the phone first and then if you get any duplicate files discovered during the transfer, overwrite them with the old ones. What's more likely to work is to go through the apps in your 'Manage Applications' program on the phone (it's in your Settings under Applications) and make sure all the apps are saved to the phone memory instead of the SD card before you swap them. But you'll can transfer over any pics or music to the new card by the first method as well.
