The idea of some being that existed before us, whether it be god, many gods, or something of that nature has existed since mankind was created. why is it that atheism was never talked about until after the first millennium?

It was, your information is off. Although the term atheism originated in 16th-century France, ideas that would be recognized today as atheistic are documented from the Vedic period (5000 - 8000 years ago) and the classical antiquity (700-800 BC).
