the real name for the swine flu is H1 N1 but what does it mean? also we're at a stage 5 pandemic alert. what's the highest or most critical stage?

the highest level is 6, when it's OFFICIALLY a pandemic. level 5 means that level 6 is highly likely to happen.
H1 and N1 come from the receptors this virus docks onto to fuse membranes with your cells and infect them.

Stages i am not sure. But the H & N classify different strains of influenze.
For example the Avian bird flu virus is called H5N1
