...Which preposition do you use in English to say that Mr Smith is my English teacher.

yes that is perfectly correct, I would NOT say 'in', I don't think it sounds right at all.

Yes it is good luck learning a foreign language is hard a frustrating I know i took 3 years of french and one year of spanish. ( I was trying to figure out which one i had a real passion for so i could master it) but you could also say. We have Mr. Smith's English class but We have Mr. Smith for English is great!

Yes, you can say that. You could also say 'Mr Smith teaches us English', but I think 'We have Mr Smith for English' is absolutely fine.

The normal way would be to say "We have Mr. Smith in English" In, not For!
