How to make tempura?

Every time I go to a Japanese restaurant, I order their fried veggies called tempura. I have tried to make it at home using recipes out of several Asian cookbooks, but it never comes out the same way. How do the pros do it?

1 egg
1 cup ice water
1/4 cup corn starch
1c bleached white flour, but preferably rice flour.
1 tsp baking powder
1/4 tsp white pepper(optional)
1/4 tsp salt

Make batter and set in fridge inside a bowl of ice water for at least 15 minutes. The batter must be cold to get the right poofyness.  It should be a thin pancake batter thickness. 

I made it for a restaurant for tempura fiddlehead ferns and squid.

In the asian stores, they sell this box of special flour made for tempura. Maybe this will help you. 
I love tempura shrimp.

Ingredients:
1 egg
1 cup ice water
1 cup all purpose flour

Preparation:
Beat an egg in a bowl. Add ice water in the bowl. Be sure to use very cold water. Add sifted flour in the bowl and mix lightly. Be careful not to overmix the batter. 
Makes 4 servings

it relatively is not a question, yet yeah, that is stressful whilst different people can't spell. unfastened for lose is my prominent.
