What can I use instead of egg to bind Veggie Fritters?
I have made Veggie and Fetta Fritters which require one egg to bind the recipe together.
But I have not eaten eggs for many years and really didn't like the taste ... so my question is what can i use instead of the egg?
The ingredients are grated zucchini, grated carrot, grated onion, peas, corn, fetta and S.R. Flour.

I found these two vegan recipes on the website, thought they might be helpful!
Vegetable fritters recipe
Recipe ingredients:
1 cup of gram, chick pea, flour
1 cup of water
A little salt
A teaspoon of chopped coriander
Sunflower oil for shallow frying
2 cups of vegetables of your choice broken or chopped into desired size, for example brocolli
Recipe method:
Beat the flour and water together with the salt and coriander until a smooth batter is formed.
Heat the oil in a large frying pan.
Dip the vegetables in the batter and then fry for about 5 minutes turning once.
Nice served with oven chips or rice and a big green salad and vegan mayo.
Corn and zucchini fritters recipe
Recipe ingredients:
1 1/2 cups corn kernels, about 3 ears
1/2 small red onion, thinly sliced
1 cup loosely packed parsley sprigs
3 small zucchini, cut into 3/4 inch fine julienne
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon freshly-ground black pepper
3 tablespoons sparkling soda water
Vegetable oil for deep frying
Recipe method:
In a large bowl, combine the corn, onion, parsley, and zucchini and toss to mix.
Add the flour and toss with your hands, separating all the ingredients to be sure they are all coated evenly with the flour.
Add the salt, pepper, and sparkling water and mix all together.
The mixture should be airy and light, but not wet. Do not overmix.
In a large heavy saucepan or deepfryer, heat about 4 inches of vegetable oil to 375 degrees F.
Gather the batter into loose, very freeform fritters about 3 inches in diameter.
When you gather them together, compact just slightly to hold in a mass, but there will still be lots of stray bits of vegetable sticking out and some will fall off and separate from the main clump.
Fry them, 2 at a time, until they are golden brown, about 3 to 4 minutes, turning over halfway through.
Stand back and watch out for splattering oil for the first minute or two.
With a skimmer or kitchen tongs, gently remove them to paper towels.
Drain and keep warm in a low oven while you finish cooking the other fritters.

If it is only one egg used in the recipe, you can totally omit it. Just don't use too much water or add a little bit more flour or corn starch .
Give it a try on a small portion. It should works. I didn't use any egg what i make cauliflower ball dip with batter and tofu ball.

Flaxseed powder is great for binding things together. No powder? Then just take some flaxseeds and put them thru a grinder (coffee grinder works great) till they are so fine that it is flaxseed meal. Add about 2 tablespoons per cup of vegetables.
If you don't have a coffee grinder, then put the flaxseeds in a blender with enough hot water (almost boiling) to cover them. Let the seeds and water sit for 15 minutes (till it cools down) and then blend them. You will then have flax eggs (and if you don't put enough water it will congeal into a slimy mass, thus add more water then).

How about some additional all purpose flour, bread crumbs, or bean flour (mixed with some water if necessary).

Wholegrains and nuts make a crumbly mixture so a soft and sticky binder is needed. Breadcrumbs or oats bind bean burgers, while nut butters bind grain burgers. A good egg replacer to bind ingredients in loaves is: for each egg, boil one tablespoon of oats in 5 tablespoons of water and use immediately.

Looking at your ingredients, if it was me, I would probably pop some mashed potato in to bind the ingredients without affecting the taste.
Alternatively if you want the eggy texture without the same taste go for a commercial egg replacer from a health food shop.

Diabetes is usually treated through a combination of diet (low sugar), exercise and medications/insulin. Milder cases can be controlled with just diet an/or exercise while more severe cases require meds or insulin as well.
