    The ingredient is literaly 'swallows nests'. nests of a rare cave swallow that makes its nests from spit. yup, swallow salliva.

    Also known as Bird's Nest Soup, this sweet dessert soup is made from the nests of the swiftlet, a type of swallow.

    INGREDIENTS:

    2 ounces birds nest

    7 to 8 tablespoons crushed rock sugar, or to taste

    4 cups water

    PREPARATION:

    Prepare the bird's nest: soak it in cold water for several hours or overnight. Rinse well. Go over the nests and pick out any loose feathers.

    Boil the bird's nests twice: Bring a pot of water to boil and simmer the bird's nests for about 5 minutes. Again, rinse well and squeeze dry.

    Place the bird's nests in the pot and add the water. Bring to a boil and simmer until the bird's nests are quite soft (up to 2 hours). Add the rock sugar, stirring to dissolve. Serve the soup hot.

    Yep. The answerers are correct. It is actually a certain kind of swallow or swift bird's saliva/spit, that it regurgitates into crevices in walls of caves and gatherers have to climb up these steep hills to obtain this "nests". This is why it's a very expensive ingredient. It can be made into a sweet dessert with rock sugar or into a soup boiled with chicken & chicken broth. It is a Chinese delicacy.

    Bird's nest in Oriental cuisine (read Chinese) is 'made' using the nests of the swiftlet - a tiny bird found throughout southeast Asia. Instead of twigs and straw, the swiftlet makes its nest from strands of gummy saliva, which harden when exposed to air. They are expensive and there are imitation bird's nest.

    It's essentially spit/drool from swallows (bird). It's supposed to be high in protein and nutrients (for the birds to feed their young) and good for your skin. It's super expensive and it's actually tastetless.
