I am not a chef yet I love to cook and am fascinated by food, recipes and techniques. I frequently cook for large groups of people at my church and enjoy trying out new recipes on them.   • How to better do lactose free?

    My daughter has been put on a lactose free diet. She loves my homemade cream of broccoli soup. Does anyone have an idea on how I can make the texture creamy without using milk or cream? My first attempt using rice milk and soft tofu pureed together was ok but lacked richness.
